Preparation

  • Start by washing your fresh jalapenos thoroughly. Slice them into about 1/4-inch rounds, ensuring to wear gloves if you’re sensitive to spicy oils.
  • In a medium-sized pot, mix together the sugar, apple cider vinegar, garlic powder, onion powder, and salt. Stir to dissolve the sugar.

Cooking

  • Heat over medium heat until the mixture comes to a gentle boil.
  • Once boiling, toss in your sliced jalapenos. Simmer for about 5-10 minutes, until slightly tender but still crunchy.
  • Remove from heat and let cool inside the pot for about 30 minutes to allow flavors to meld.
  • Transfer the candied jalapenos into clean, sterilized jars, pouring the syrup over the top to cover all slices.
  • Seal the jars with lids and store in the refrigerator for up to a month.

Notes

For extra heat, consider leaving some seeds in the jalapenos. Always taste your syrup before pouring it over the jalapenos to adjust sweetness and acidity.
