  • 1/2 cup chicken broth Creates a lovely base for the gravy.
  • 1/2 cup heavy cream For a luscious, creamy texture.

Preparation

  • Season the pork chops with salt and black pepper on both sides.
  • In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter over medium-high heat.
  • Add the seasoned pork chops to the pan and sear for about 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside.
  • In the same skillet, add another tablespoon of butter and reduce the heat to medium. Sauté the sliced onions for about 5-7 minutes until they are golden brown and caramelized.
  • Add the sliced mushrooms and minced garlic to the skillet and cook for an additional 3-4 minutes.
  • Pour in the chicken broth and bring to a gentle simmer, stirring to release flavors from the bottom of the pan.
  • Stir in the heavy cream and thyme leaves to make a rich sauce.
  • Return the seared pork chops to the skillet, nestling them in the gravy. Simmer for about 10-15 minutes until the pork is cooked through.
  • Serve the pork chops warm, garnished with chopped fresh parsley.

Notes

For crispy edges, ensure your skillet is hot enough. Consider adding a splash of white wine for extra richness. Leftovers can be stored in an airtight container for up to three days and reheated gently.
