  • 1 cup applesauce
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a denser texture.
  • 1 cup sugar Adjust sweetness to taste.
  • 1/2 cup vegetable oil Can use a plant-based oil for vegan option.
  • 3 large eggs Substitute with flaxseed meal mixed with water for vegan option.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon Add nutmeg or ginger for variation.
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the grated carrots, zucchini, and applesauce together.
  • In another bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, and salt.
  • In a separate bowl, beat the eggs and then mix in the oil and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients until just combined.
  • Fold in the carrot, zucchini, and apple mixture.

Baking

  • Pour the batter into a greased loaf pan.
  • Bake for about 60-70 minutes or until a toothpick comes out clean.
  • Let it cool before slicing.

Notes

For serving, enjoy the bread plain or spread with butter, cream cheese, or nut butter. Pairs well with tea or coffee. Store in an airtight container for up to 3 days or freeze for up to 3 months.
