Ingredients
  

For the cupcakes

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional) Adds a lovely texture and nutty flavor.

For the cream cheese frosting

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line your muffin tin with cupcake liners.
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, blend the granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
  • Gradually add the dry ingredients into the wet mixture and stir until just combined.
  • Fold in the grated carrots, crushed pineapple, and walnuts if using.
  • Fill each cupcake liner about 2/3 full with batter.

Baking

  • Place the muffin tin in the oven and bake for about 18-20 minutes.
  • Once golden, remove them from the oven and let them cool in the pan for about 5 minutes before transferring to a wire rack.

Frosting

  • In a mixing bowl, beat together the cream cheese and butter until smooth and fluffy.
  • Add the powdered sugar and vanilla extract, mixing until creamy.
  • Once the cupcakes have completely cooled, frost them generously with the cream cheese frosting.

Serving

  • Enjoy your cupcakes warm with a cold glass of milk or a cup of tea!

Notes

Do not rush the cooling process; let them cool before frosting for best results. For a flavor boost, consider adding a touch of vanilla bean into the frosting or experimenting with different nuts.
