  • 1 teaspoon cinnamon For that warm, inviting flavor.
  • 0.5 teaspoon ginger Adds a delightful spiciness.
  • 0.25 teaspoon salt Enhances all the flavors.

Wet Ingredients

  • 0.5 cups sugar Sweetness that you can’t resist.
  • 0.5 cups brown sugar Brings a lovely caramel flavor.
  • 0.5 cups vegetable oil Keeps our muffins moist and tender.
  • 2 large eggs Give structure and richness.
  • 1 teaspoon vanilla extract For aroma and flavor.

Main Ingredients

  • 1.5 cups grated carrots The star ingredient.
  • 0.5 cups crushed pineapple, drained Adds moisture and a lovely sweetness.
  • 0.5 cups chopped walnuts For a lovely crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line your muffin tin with paper liners or spray with non-stick cooking spray.
  • In a large bowl, whisk together all dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, and salt.
  • In another bowl, beat the sugars, vegetable oil, eggs, and vanilla until mixed well.
  • Stir in grated carrots, crushed pineapple, and chopped walnuts into the wet mixture.
  • Gently fold the dry ingredients into the wet ingredients, being careful not to overmix.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Baking

  • Bake the muffins in preheated oven for 20-25 minutes until a toothpick comes out clean.
  • Allow the muffins to cool for 5 minutes in the tin before transferring to a wire rack.
  • Enjoy the muffins warm, slathered with butter if desired.

Notes

These muffins can be enjoyed plain or with a spread. Store leftovers in an airtight container for a few days or freeze for longer storage.
