  • 1 cup milk Creates a creamy texture.
  • 2 cups shredded cheddar cheese The star ingredient for rich flavor.
  • 1 cup cream cheese, cubed Adds a velvety texture.
  • 1 can diced tomatoes with green chilies, drained Offers a tangy twist.
  • Salt and pepper to taste Essential for flavor balance.

Preparation

  • In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Sauté the diced onion and minced jalapeño until the onion becomes translucent, about 3-4 minutes.
  • Stir in 2 minced cloves of garlic and cook for another minute until fragrant.
  • Pour in 1 cup of milk and bring to a gentle simmer, stirring to combine.
  • Gradually add 2 cups of shredded cheddar cheese and 1 cup of cubed cream cheese, stirring continuously until melted and smooth.
  • Gently fold in the drained can of diced tomatoes with green chilies and season with salt and pepper to taste.
  • Serve the dip warm with tortilla chips.

Notes

For a creamier dip, replace half the milk with heavy cream. Don’t rush the melting process; let the cheese melt slowly for the best texture.
