Main Ingredients

  • 1 pound Italian sausage Choose sweet or spicy based on preference.
  • 12 ounces Cheese tortellini Any flavor can be used.
  • 14.5 ounces Diced tomatoes (canned) Preferably with basil and oregano.
  • 1 medium Chopped onions
  • 3 cloves Minced garlic
  • 2 cups Fresh arugula Can be replaced with other greens.
  • 1 tablespoon Italian herbs Includes oregano and basil.
  • To taste Salt and pepper
  • 6 cups Chicken or vegetable broth

Preparation

  • Prepare your ingredients by chopping, measuring, and arranging them on the counter.
  • In a large pot over medium heat, add the Italian sausage and brown for about 5-7 minutes.
  • Once browned, add the chopped onions and minced garlic, cooking for another 3-5 minutes until onions are translucent.
  • Pour in 6 cups of chicken or vegetable broth, stirring well and letting it come to a gentle simmer.
  • Add the canned diced tomatoes, stir, and let the flavors mingle for a couple of minutes.
  • Stir in the cheese tortellini and cook for 5-7 minutes or until they float to the top.
  • Just before serving, add the fresh arugula and stir until wilted.
  • Season the soup with salt, pepper, and additional herbs to taste.
  • Ladle soup into bowls and serve hot, optionally garnished with Parmesan cheese.

Notes

For perfect results, don’t skip the browning step. Add a pinch of red pepper flakes for heat if desired. Store leftovers in an airtight container for 3-4 days. Reheat gently, adding broth or water if too thick.
