  • 1/2 cup diced pickles
  • 1/4 cup ketchup
  • 1 tsp mustard
  • 1 package egg roll wrappers
  • cooking spray
  • Salt and pepper to taste

Instructions

Preparation

  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add onions, pickles, ketchup, mustard, salt, and pepper to the beef and mix until combined.
  • Lay an egg roll wrapper on a flat surface and place 2-3 tablespoons of the beef mixture in the center.
  • Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly.
  • Repeat with remaining wrappers and filling.

Cooking

  • Preheat the air fryer to 375°F (190°C).
  • Lightly spray the egg rolls with cooking spray and place in a single layer in the air fryer basket.
  • Cook for about 8-10 minutes or until golden brown and crispy, flipping halfway through.

Notes

Serve warm with additional ketchup or your favorite dipping sauce. Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, use the air fryer at 350°F (175°C) for a few minutes until crispy.
