Cheesecake-Filled Chocolate Chip Cookies

Ingredients
For the Cookie Dough
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup chocolate chips
For the Cheesecake Filling
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 tsp vanilla extract
Instructions
Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, and salt. Set aside.
- In a separate bowl, whisk melted butter with brown sugar and granulated sugar until smooth.
- Stir in vanilla extract and egg until well combined.
- Gradually add the dry ingredients to the wet mixture until combined.
- Stir in chocolate chips.
- In another bowl, beat cream cheese, sugar, and vanilla extract until creamy. Add yolk and mix until smooth.
Assembly
- Scoop a tablespoon of cookie dough, flatten it slightly, add a dollop of cheesecake filling, and cover with more dough.
- Place on a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes until edges are golden.
- Let cool before serving.
Notes
These cookies are best served warm, just after baking. You can store them in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. For longer storage, freeze them for up to 3 months.
