Ingredients
  

For the Cookie Dough

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup chocolate chips

For the Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix flour, baking soda, and salt. Set aside.
  • In a separate bowl, whisk melted butter with brown sugar and granulated sugar until smooth.
  • Stir in vanilla extract and egg until well combined.
  • Gradually add the dry ingredients to the wet mixture until combined.
  • Stir in chocolate chips.
  • In another bowl, beat cream cheese, sugar, and vanilla extract until creamy. Add yolk and mix until smooth.

Assembly

  • Scoop a tablespoon of cookie dough, flatten it slightly, add a dollop of cheesecake filling, and cover with more dough.
  • Place on a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes until edges are golden.
  • Let cool before serving.

Notes

These cookies are best served warm, just after baking. Store in an airtight container for up to 3 days or refrigerate for up to a week. For longer storage, freeze for up to 3 months.
