Cheesy Beef and Potato Burritos

Ingredients
  

For the Potatoes

  • 3 large large potatoes Peeled, washed, and cut into cubes
  • 2 tbsp olive oil For tossing the potatoes
  • to taste salt
  • to taste pepper
  • 1 tsp garlic powder
  • 1 tsp paprika

For the Beef Filling

  • 1 lb ground beef
  • 1/2 tsp salt For seasoning the beef
  • 1/2 tsp pepper For seasoning the beef
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1/2 cup water For cooking the beef
  • 1 tbsp minced garlic For extra flavor

For the Burritos

  • 1 cup nacho cheese As a filling
  • 5 burrito-size flour tortillas
  • to taste taco sauce For serving

Instructions
 

Preparation

  • Peel, wash, and cut up the potatoes into small cubes. Toss them with olive oil, salt, pepper, paprika, and garlic powder in a large bowl.

Cooking the Potatoes

  • Cook the potatoes in the air fryer at 400 degrees for about 25 minutes, shaking them around at least a couple of times while they cook.

Cooking the Beef

  • While the potatoes are cooking, add the ground beef to a large skillet over medium-high heat. Season with salt, pepper, chili powder, cumin, dried cilantro, and paprika.
  • Drain any excess grease if needed once the beef is fully cooked. Stir in 1/2 cup of water.
  • Keep the beef on low heat until the potatoes are crispy.

Assembling the Burritos

  • Lay out a large tortilla, add nacho cheese, a scoop of the ground beef, some taco sauce, a scoop of crispy potatoes, and top with a bit more nacho cheese.
  • Roll the burrito up.

Cooking the Burritos

  • Add the burritos to a skillet over medium-high heat and cook until golden brown.
  • Enjoy!

Notes

These burritos are best served hot and fresh. You can cut them in half for a fun presentation. Consider pairing them with extra taco sauce or salsa for dipping. A side of fresh salad or corn can also complement the meal perfectly.
