  • 1 lb Lean ground beef Use lean to avoid excess grease.

Vegetables

  • 1 medium Chopped onions
  • 1 bell pepper Chopped red bell peppers
  • 1 bell pepper Chopped green bell peppers

Cheesy Goodness

  • 1 cup Shredded cheese For mixing in.
  • 1 can Rotel (diced tomatoes with green chilies) Provides a little kick.
  • 1 cup Additional shredded sharp cheddar cheese For topping.

  • 1 teaspoon Cumin

Preparation

  • Start by preparing the Rice a Roni Spanish rice according to the instructions on the box.
  • In a large skillet over medium heat, add your lean ground beef and brown it, breaking it up with a spatula.
  • Add the chopped onions and both bell peppers to the skillet, sautéing until tender (about 5-7 minutes).

Mixing

  • Add the shredded cheese, Rotel, salt, pepper, and cumin to the beef mixture and stir well.
  • Once combined, add the prepared Rice a Roni to the skillet and mix until well coated.

Baking

  • Pour the mixture into a greased baking dish, spreading it out evenly.
  • Top with the additional cup of shredded sharp cheddar cheese.
  • Preheat the oven to 350°F and bake for about 25-30 minutes, checking for a bubbly and golden top.

Serving

  • Let the dish rest for about 5 minutes before serving to allow it to set.

Notes

Consider adding fresh herbs like parsley or cilantro for extra flavor. Leftovers can be stored in an airtight container for 3-4 days and reheated in the oven or microwave.
