Broth and Base

  • 4 cups vegetable or chicken broth This is the base of our soup, creating a rich and nourishing broth.
  • 2 cups shredded cheese (cheddar or your choice) Cheese makes everything better! I love a good sharp cheddar for the flavor.
  • 2 tablespoons butter Butter creates a rich base that enhances all the flavors.

Toppings and Seasonings

  • 1/2 cup bacon, cooked and crumbled Bacon adds that irresistible umami flavor and a delightful crunch.
  • 1/2 cup breadcrumbs These will give an extra layer of texture when sprinkled on top.
  • to taste Salt and pepper Simple seasonings that can elevate your soup to new heights.
  • optional herbs for seasoning (such as thyme or parsley) Fresh herbs brighten everything up and add a splash of color!

Preparation

  • Gather your ingredients: It’s always a good idea to have everything prepped and within reach.
  • Prep the veggies: Start by chopping the onion, carrots, and celery.

Cooking

  • In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery, and sauté until they begin to soften, about 5-7 minutes.
  • Next, stir in the minced garlic and cook for another minute.
  • Toss in your chopped cauliflower along with the broth. Bring everything to a boil, then reduce the heat to a simmer. Let it bubble away for about 15 minutes until the cauliflower is tender.
  • Use an immersion blender to puree the soup until you reach your desired consistency.
  • Stir in the shredded cheese until it melts and becomes creamy.
  • Season your soup with salt and pepper to taste.
  • Ladle the warm soup into bowls and top each bowl with crumbled bacon and a sprinkle of breadcrumbs.

Notes

To really get a crisp top with breadcrumbs, you can throw the bowls under the broiler for a minute or two. Keeping the cauliflower in larger chunks before blending adds a delightful texture.
