  • 2 cups Milk or cream

  • 1 cup Shredded cheese (like cheddar)
  • 4 slices Bacon, cooked and crumbled
  • 1/2 cup Breadcrumbs

Preparation

  • Start by gathering all your ingredients.
  • Chop the onion, carrots, celery, and garlic.

Cooking

  • In a large pot over medium heat, melt a tablespoon of cooking oil.
  • Add the chopped onion, carrots, celery, and minced garlic. Cook until softened.
  • Stir in the chopped cauliflower and let it absorb the flavors for a couple of minutes.
  • Add the vegetable broth and bring to a boil.
  • Once boiling, reduce heat, cover, and simmer for about 15 minutes or until the cauliflower is tender.
  • Blend the soup until smooth using an immersion blender or a regular blender in batches.
  • Stir in the milk or cream and shredded cheese until melted.
  • Season with salt and pepper to taste.

Topping

  • In a separate pan, melt butter and toast the breadcrumbs until golden brown.

Assembly

  • Serve the soup hot, topped with crumbled bacon and buttery breadcrumbs.
