  • 4 pieces boneless, skinless chicken breasts Season with salt, pepper, and paprika.
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup shredded cheddar cheese Can substitute with other types of cheese.
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika For seasoning chicken and rice.
  • Salt and pepper To taste.
  • Fresh thyme or parsley Optional, for garnish.

Preparation

  • Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the uncooked rice, chicken broth, cream of chicken soup, milk, garlic powder, onion powder, paprika, salt, and pepper. Mix well and pour this mixture into a greased 9x13-inch baking dish.
  • Season the chicken breasts with salt, pepper, and a sprinkle of paprika. Lay the chicken breasts over the rice mixture in the baking dish.

Baking

  • Sprinkle the shredded cheddar cheese evenly over the chicken and rice.
  • Cover the dish with foil and bake for 40 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the chicken is fully cooked (165°F/74°C) and the cheese is golden and bubbly.
  • Let cool for 5 minutes before serving. Garnish with fresh thyme or parsley if desired.

Notes

For extra flavor, consider adding sautéed onions or mushrooms to the rice mixture. You can use brown rice instead of white rice, but adjust the cooking time and broth accordingly. You can make this casserole with other proteins, such as turkey or cooked ham, and also add vegetables like broccoli or peas for extra nutrition.
