  • 1 tablespoon olive oil For sautéing.

  • ½ onion, chopped Creates a comforting base flavor.
  • 2 cloves garlic, minced Enhances aroma and flavor.

Preparation

  • Gather all your ingredients.
  • In a large skillet, drizzle the olive oil and heat it on medium.
  • Add the chopped onions and minced garlic to the skillet and sauté until fragrant.
  • Season the chicken breasts with salt and pepper, then add them to the skillet. Sear for about 5-7 minutes on each side.
  • Carefully transfer the cooked chicken to a plate.
  • In the same skillet, add the uncooked rice and stir to coat with the flavors.
  • Pour in the chicken broth and bring to a gentle boil.
  • Return the chicken to the skillet with the rice and broth.
  • Cover with a lid and reduce heat to low, letting it simmer for about 18-20 minutes.
  • After simmering, sprinkle in the frozen peas and shredded cheese, cover, and let sit for another 5 minutes.
  • Check for doneness; the chicken should be fully cooked and the rice fluffy.
  • Fluff the rice gently with a fork before serving.

Notes

For perfect results, broil for a crispy finish, add diced jalapeños for spiciness, and save leftovers for a quick lunch. Pairs well with a fresh green salad or warm crusty bread.
