  • 4 pieces tortillas Use flour or corn tortillas based on preference.
  • 2 cups cooked chicken, shredded You can use leftovers from a roasted chicken or rotisserie chicken.
  • 1 cup shredded cheese Cheddar or Monterey Jack cheese works well.
  • 1/2 cup salsa Use your preferred salsa for flavor.
  • 1/2 cup sour cream For serving on the side.
  • 1/4 cup chopped green onions Add for an extra flavor boost.
  • Salt and pepper to taste Adjust according to your preferences.

Preparation

  • Preheat a skillet over medium heat.
  • In a mixing bowl, combine the shredded chicken, cheese, salsa, and green onions. Season with salt and pepper.
  • Place a portion of the chicken mixture onto each tortilla.
  • Roll the tortillas tightly and place them seam-side down in the skillet.

Cooking

  • Cook for about 3-4 minutes on each side until golden and the cheese is melted.

Serving

  • Serve warm with sour cream on the side.
  • You can cut them in half or quarters for easier eating.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 2-3 days. To reheat, place them back in a skillet on medium heat or in the microwave until warm. Can be frozen for up to 2 months if wrapped tightly.
