Cheesy Garlic Bread Shrimp Grilled Cheese

Ingredients
  

For the Sandwich

  • 8 slices slices of your favorite bread Crusty bread is ideal. Sourdough or whole grain can also be used.
  • 2 cups shredded mozzarella cheese Can substitute with provolone or other preferred cheese.
  • 1/2 cup grated Parmesan cheese Freshly grated is recommended for best flavor.
  • 2 tablespoons butter For sautéing the shrimp and spreading on the bread.
  • 4 cloves garlic, minced Essential for flavor.
  • 2 tablespoons fresh parsley, chopped For garnish.
  • 1/2 teaspoon salt Enhances flavors.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1/4 teaspoon red pepper flakes Optional; adds spice.
  • 4 tablespoons butter (for grilling) More flavor for grilling.

For the Shrimp

  • 1/2 pound shrimp, peeled and deveined Fresh is ideal; frozen works if thawed and dried.

Instructions
 

Preparation of Garlic Butter Shrimp

  • In a skillet over medium heat, melt 2 tablespoons of butter.
  • Add minced garlic and sauté until fragrant.
  • Add shrimp, salt, black pepper, and red pepper flakes. Cook until shrimp turn pink, about 2-3 minutes per side.
  • Remove shrimp from skillet and set aside.

Assembling the Sandwiches

  • In a small bowl, mix the remaining 2 tablespoons of butter with half of the chopped fresh parsley and some sautéed garlic to create garlic butter spread.
  • Spread garlic butter on one side of each slice of bread.
  • On the non-buttered side of 4 slices, layer with shredded mozzarella cheese, shrimp, and grated Parmesan cheese.
  • Sprinkle remaining parsley on top.
  • Top with another slice of bread, buttered side out.

Grilling the Sandwiches

  • Heat a skillet or griddle over medium heat and place the assembled sandwiches in it.
  • Cook until golden brown and cheese is melted, about 3-4 minutes per side.

Notes

Using a weighted press on top of the sandwiches while grilling helps meld the ingredients together and creates a perfect crust. Add more mozzarella for extra gooeyness.
