Ingredients
  

Main ingredients

  • 1 medium Spaghetti squash
  • 2 tablespoons Olive oil Divided between roasting the squash and sautéing garlic
  • 3 cloves Garlic, minced
  • 4 cups Fresh spinach Use fresh for the best flavor
  • 1 cup Grated Parmesan cheese Be generous!
  • Salt and pepper, to taste
  • Red pepper flakes (optional) For added spice

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Brush the inside of each half with olive oil and season with salt and pepper. Place cut-side down on a baking sheet.

Cooking

  • Roast the spaghetti squash in the oven for about 30-40 minutes until fork-tender.
  • In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  • Add in the fresh spinach and cook for about 3-4 minutes until wilted.
  • Remove from heat and stir in the grated Parmesan cheese until melted into a creamy sauce.
  • Once the spaghetti squash is roasted, scrape the flesh with a fork to create 'noodles'.
  • In a large bowl, combine the spaghetti squash strands with the sautéed spinach and garlic. Add red pepper flakes if desired and toss to combine.
  • Taste and adjust seasoning as necessary before serving.

Serving

  • Serve warm, garnished with extra Parmesan if desired, alongside a green salad or crusty bread.

Notes

Don’t skip the roasting for perfect texture and flavor. You can prepare the ingredients ahead of time and assemble them before baking.
