Main Ingredients

  • 1 package pierogi (potato and cheese filling) You can use any type of pierogi you like.
  • 2 cups shredded cheddar cheese For extra flavor, consider using pepper jack cheese.
  • 1 cup sour cream You can add a dollop for serving.
  • 1 cup cooked and crumbled bacon For a vegetarian version, omit the bacon.
  • 1 medium onion, chopped Sauté until translucent.
  • 2 cups chicken broth Use vegetable broth for a vegetarian option.
  • to taste Salt and pepper
  • as needed Chopped chives for garnish

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, sauté the chopped onion until translucent.
  • In a baking dish, layer half of the pierogi.
  • Add half of the sautéed onions, half of the shredded cheese, and half of the sour cream.
  • Repeat the layers with the remaining ingredients.
  • Pour the chicken broth over the top.

Baking

  • Cover with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes until golden and bubbly.
  • Garnish with crumbled bacon and chopped chives before serving.

Notes

Cheesy Pierogi Casserole is best served warm. Pair it with a simple green salad or steamed veggies for a complete meal. Store leftovers in an airtight container in the refrigerator for 3 to 4 days. You can reheat in the oven or microwave.
