  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 4 medium potatoes, peeled and cubed Russet or Yukon Gold recommended.
  • 2 medium carrots, diced Parsnips can be used for a different flavor.
  • 1 medium onion, chopped Provides the savory base.
  • 2 cloves garlic, minced Feel free to add more if you love garlic!
  • 4 cups chicken or beef broth Homemade stock preferred but store-bought works.
  • 2 cups milk or cream Whole milk for comfort, heavy cream for indulgence.
  • 2 cups shredded cheddar cheese The star ingredient for cheesiness!
  • 2 tablespoons butter Adds richness and flavor.
  • 1 teaspoon paprika For warmth and color.
  • Salt and pepper to taste Season according to your preference.
  • Fresh parsley for garnish Adds a fresh pop of color.

  • In a large pot over medium heat, brown the ground beef until golden, then drain the excess fat.
  • Melt the butter in the same pot and sauté the onions, garlic, and carrots until soft and fragrant.
  • Add the cubed potatoes and pour in the broth, bringing the mixture to a boil.
  • Once boiling, reduce the heat and let the soup simmer for 15-20 minutes until potatoes are tender.
  • Use a potato masher or immersion blender to blend some of the potatoes for a creamier texture.
  • Stir the cooked ground beef back into the pot with the veggies and broth.
  • Gradually stir in the milk or cream and shredded cheddar cheese until melted and combined.
  • Season with paprika, salt, and pepper to taste, stirring well.
  • Garnish the soup with fresh parsley before serving.

Notes

This soup is even better the next day! Store in an airtight container in the fridge for up to 3-4 days. Reheat gently on the stovetop, adding a splash of milk if needed.
