Ingredients
  

Main Ingredients

  • 1 lb baby potatoes, halved
  • 12 oz smoked sausage, sliced Can use any type of smoked sausage or kielbasa.
  • 1 cup shredded cheddar cheese Add more for extra gooiness.
  • 1/2 cup shredded mozzarella cheese
  • 1 cup heavy cream Can substitute with Greek yogurt or low-fat cream for a lighter version.
  • 2 tbsp ranch seasoning mix
  • 1 tbsp olive oil
  • to taste Salt and pepper
  • 2 tbsp chopped chives For garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss the halved potatoes with olive oil, salt, and pepper.
  • Spread the potatoes on a baking sheet and roast for 25–30 minutes until they are golden and tender.

Cooking

  • In a skillet over medium heat, sauté the sausage slices until browned on both sides. Remove from skillet and set aside.
  • In the same pan, add the heavy cream and ranch seasoning. Simmer gently, then stir in cheddar and mozzarella cheeses until melted and smooth.
  • Combine the roasted potatoes and sausage in a baking dish. Pour the cheese sauce over the top and stir gently to coat everything.
  • Bake in the oven for an additional 10 minutes or until bubbly.
  • Garnish with chopped chives and serve hot.

Notes

Enjoy as a main dish or a side. It pairs well with a fresh salad or steamed vegetables. For added flavor, top with extra chives or red pepper flakes.
