Cheesy Skillet Shrimp & Tortellini

Ingredients
  

Main Ingredients

  • 1 pound medium shrimp, peeled and deveined Frozen shrimp can be used, thawed first.
  • 1 package refrigerated cheese tortellini Spinach tortellini can also be used.

Sauce Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup white wine (optional) Adds nice flavor.
  • 1.5 cups chicken broth
  • 1/2 cup heavy cream Can substitute with half-and-half or whole milk.
  • 1/2 cup parmesan cheese, grated Add mozzarella or fontina for extra gooeyness.

Seasoning

  • to taste salt
  • to taste pepper
  • 1 teaspoon Italian herbs
  • 1 pinch red pepper flakes Optional for a kick.
  • to taste fresh herbs like parsley or basil For garnish.

Instructions
 

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Season shrimp with salt and pepper, then cook for about 2 minutes per side until just pink.
  • Remove shrimp from skillet and set aside.
  • In the same skillet, add butter and sauté minced garlic for about 30 seconds until fragrant.
  • If using white wine, add it now and let it simmer for a minute.
  • Pour in chicken broth and bring to a simmer.
  • Add tortellini directly to the skillet and cook according to package directions, approximately 7-9 minutes.
  • When the tortellini is almost tender, stir in heavy cream and grated parmesan.
  • Let it simmer for 2-3 minutes until the sauce starts to thicken.
  • Return shrimp to the skillet and gently fold everything together, heating through for another minute or two.
  • Sprinkle with fresh herbs and additional cheese before serving.

Notes

This recipe is flexible; feel free to add veggies like spinach, mushrooms, or asparagus. Leftovers reheat well; add a splash of cream or milk when warming. Serve the whole skillet for a family-style meal.
