  • 3 lb yellow squash, sliced
  • 1/2 cup diced Vidalia onion (optional) Can be omitted
  • 10.5 oz can cream of chicken soup Use a gluten-free option for a gluten-free version
  • 1 cup mayonnaise
  • 1 large egg
  • 8 oz shredded cheddar cheese Feel free to experiment with different cheeses
  • 1 tsp salt
  • 1/2 tsp fresh ground black pepper

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the sliced yellow squash, onion (if using), cream of chicken soup, mayonnaise, egg, shredded cheddar cheese, salt, and black pepper.
  • Mix until well combined.

Baking

  • Pour the mixture into a greased baking dish.
  • Bake for 30-40 minutes, or until the squash is tender and the top is golden brown.
  • Allow to cool slightly before serving.

Notes

Serve warm as a side dish. Pairs well with grilled meats or roasted chicken. For added flavor, sprinkle fresh herbs like parsley or chives on top. To store leftovers, cool completely, then refrigerate for 3-4 days or freeze for 2-3 months.
