  • 1 lb ground beef This is our main star. It gives the casserole that hearty flavor and satisfying protein.
  • 1 small onion, diced Onions add a touch of sweetness and richness.
  • 1 clove garlic, minced Brings a delightful aroma and depth of flavor.
  • 1 can cream of mushroom soup Adds a luscious texture and ties everything together.
  • 1/2 cup sour cream Lightens up the dish while giving it a tangy finish.
  • 2 cups shredded cheddar cheese Melty and gooey goodness.
  • 1/2 cup milk Makes the mixture creamy.
  • 1 bag frozen tater tots (32 oz) Adds a crispy top layer.
  • 1/4 cup diced red bell peppers (optional, for garnish) For a pop of color and sweetness.
  • 2 tbsp chopped chives (for garnish) Adds a fresh taste.
  • Salt and pepper to taste Essential seasonings.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add your ground beef. Cook until browned, stirring occasionally.
  • While the beef is cooking, chop your onion and mince the garlic. When the beef is browned, add these to the skillet and continue cooking for about 2-3 minutes.
  • Remove any excess grease from the skillet.
  • In a mixing bowl, combine the cream of mushroom soup, sour cream, milk, and 1 cup of shredded cheddar cheese. Whisk until smooth.
  • Add the creamy mixture to the skillet with the beef, onion, and garlic. Stir until well coated and season with salt and pepper.
  • Grab a greased 9x13-inch baking dish and pour the beef mixture in, spreading it out evenly.
  • Arrange the frozen tater tots in a single layer on top of the beef mixture.
  • Sprinkle the remaining 1 cup of shredded cheddar cheese all over the tater tots.

Cooking

  • Bake in the preheated oven for 30-35 minutes, until the cheese is melted and the tater tots are crispy and golden brown.
  • When done, sprinkle with diced red bell peppers and chopped chives.

Serving

  • Allow to cool for a few minutes and then serve warm.

Notes

For a bit of a kick, consider adding some diced jalapeños. You can also use ground turkey or chicken instead of beef. To ensure extra crispy tater tots, pop them in the air fryer for a few minutes before layering.
