  • 4 cups zucchini, chopped Fresh zucchini, diced
  • 2 cups bread cubes Day-old or toasted
  • 2 cups shredded cheddar cheese Divided into two portions
  • 1/2 cup sour cream Adds creaminess
  • 1/4 cup grated Parmesan cheese Enhances flavor
  • 1 egg Binds the mixture
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper To taste
  • 1 tablespoon butter Optional, for topping

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch casserole dish.
  • In a large bowl, combine chopped zucchini, sour cream, egg, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  • Fold in the bread cubes and 1 1/2 cups of shredded cheddar cheese until everything is evenly coated.
  • Pour the mixture into the prepared casserole dish.
  • Sprinkle the remaining cheddar cheese and optional butter on top.

Baking

  • Bake uncovered for 30-35 minutes, or until the top is golden and bubbly.
  • Serve warm and enjoy!

Notes

For extra flavor, try adding cooked bacon or sausage. Use a different cheese blend for varied tastes. Ensure to drain excess moisture from the zucchini.
