  • 4 cups zucchini, chopped Use fresh zucchini for the best flavor.
  • 2 cups bread cubes (day-old or toasted) Substitute whole grain bread for a healthier option.
  • 2 cups shredded cheddar cheese Reserve 1 1/2 cups for mixing and remaining for topping.
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp butter (optional, for topping)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13" casserole dish.
  • In a bowl, combine the chopped zucchini, sour cream, egg, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well.
  • Fold in the bread cubes and 1 1/2 cups of cheddar cheese until everything is evenly coated.
  • Pour the mixture into the greased casserole dish.
  • Sprinkle the remaining cheddar cheese on top and add butter, if using.

Baking

  • Bake uncovered for 30–35 minutes, or until the top is golden and bubbly.
  • Serve warm and enjoy!

Notes

Cheesy Zucchini Casserole is best served warm. It pairs well with grilled chicken, fish, or a simple salad. Garnish with fresh herbs like parsley or basil for added flavor. For extra spice, add red pepper flakes. You can also add cooked bacon or sausage for flavor and experiment with different cheeses.
