Ingredients
  

For the Soup

  • 1 lb Boneless, skinless chicken breasts
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Onions, diced
  • 1 tsp Salt To taste
  • 1/2 tsp Salt and pepper To taste
  • 1 tsp Dried thyme
  • as desired Fresh parsley (optional, for garnish)

For the Dumplings

  • 2 cups Flour
  • 1 tsp Baking powder
  • 1/2 cup Milk (for dumplings)
  • 1/4 cup Butter, melted

Instructions
 

Preparation

  • Start by dicing your onions, carrots, and celery.
  • In a large pot, over medium heat, sauté the onions until they’re translucent.
  • Add in the diced carrots and celery and sauté for about 5 minutes until they start to soften.

Cooking

  • Pour in the chicken broth and bring to a gentle boil.
  • Add the chicken breasts and let it simmer for about 20 minutes.
  • Once cooked, remove the chicken from the pot and shred it into bite-sized pieces.
  • Return the shredded chicken to the pot along with the heavy cream.

Dumpling Preparation

  • In a separate bowl, mix together the flour, baking powder, and salt.
  • Whisk together the milk and melted butter, then add to the dry ingredients and mix gently.
  • Drop spoonfuls of the dumpling mixture into the simmering soup and cover the pot.
  • Steam the dumplings for about 15-20 minutes on medium-low heat.

Final Touches

  • Season the soup to taste with salt and pepper.
  • Sprinkle fresh parsley before serving.

Notes

For crispy dumplings, consider using buttermilk instead of regular milk. You can also add a bay leaf during simmering for additional flavor, but remember to remove it before serving.
