  • 2 cloves garlic, minced For aroma and flavor.

  • 1 tablespoon olive oil Adds richness.

Cooking Steps

  • Start by heating a large pot over medium heat.
  • Add the olive oil; once warm, sauté the sweet onion and garlic until translucent, about 5 minutes.
  • Add the diced carrots and celery, cooking for another 5-7 minutes until softened.
  • Stir in the shredded chicken until coated with vegetables.
  • Pour in the chicken broth and bring to a boil.
  • Once boiling, add the white rice and stir, then reduce heat to low and simmer for 20-25 minutes.
  • Taste the soup and season with salt and pepper as needed.
  • If desired, sprinkle fresh herbs over the soup before serving.
  • Ladle the soup into bowls and serve hot.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat on medium heat, adding a splash of water or broth if necessary.
