  • 1 lb Chicken breast Use bone-in for more flavor.
  • 1 cup Rice Regular rice, or a gluten-free alternative like quinoa.
  • 4 cups Chicken broth Homemade or store-bought.
  • 1 Onion, diced
  • 2 Carrots, chopped
  • 2 stalks Celery, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Thyme
  • Salt and pepper To taste.
  • 2 tbsp Olive oil For sautéing vegetables.

Preparation Steps

  • Begin by prepping all your ingredients: dice the onion, chop the carrots and celery, and mince the garlic.
  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion, carrots, and celery to the pot and sauté until tender.
  • After about five minutes, stir in the minced garlic and cook for an additional minute.
  • Add the chicken breast, chicken broth, thyme, salt, and pepper, then bring to a gentle boil.
  • Reduce the heat and cover the pot, allowing it to simmer for around 20 minutes.
  • Remove the chicken from the pot and shred it into bite-sized pieces.
  • Return the shredded chicken to the pot and stir in the rice, cooking until the rice is tender, about 15 to 20 minutes.
  • Serve the soup hot, garnished with fresh herbs if desired.

Notes

Taste the broth before serving and adjust seasoning as needed. Fresh herbs like parsley can add a lovely touch.
