Ingredients
  

Main Ingredients

  • 1 lb Chicken breast Use bone-in for extra flavor.
  • 1 cup Rice You can substitute with noodles or couscous.
  • 4 cups Chicken broth
  • 1 pcs Onion (chopped)
  • 2 pcs Carrots (diced)
  • 2 pcs Celery stalks (diced)
  • 2 cloves Garlic (minced)
  • 1 tsp Thyme Use fresh for better flavor.
  • Salt and pepper Season to taste.
  • Parsley (for garnish) Optional but recommended.

Preparation

  • Heat a large pot over medium heat. Add a splash of olive oil.
  • Sauté chopped onion, diced carrots, and diced celery for about 5-7 minutes until the vegetables are tender.
  • Stir in minced garlic and cook for another minute, being careful not to burn it.

Cooking

  • Add the chicken breast and chicken broth, bringing the mixture to a gentle boil.
  • Reduce the heat to a simmer and let it bubble for about 20 minutes.
  • Carefully remove the chicken breast, allow it to cool, and then shred it into bite-sized pieces.
  • Return shredded chicken to the pot and stir in rice, simmering for another 15-20 minutes until the rice is tender.
  • Season the soup with thyme, salt, and pepper, and optionally add a splash of lemon juice.
  • Ladle the soup into bowls and garnish with fresh parsley before serving warm.

Notes

For best results, don't rush the sauté step and consider using fresh herbs for extra flavor.
