Ingredients
  

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sundried tomatoes, chopped
  • 8 oz pasta (your choice)
  • 2 cups fresh spinach
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions
 

Cooking

  • In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Stir in the sundried tomatoes and cook for another 2 minutes.
  • Pour in the chicken broth and bring to a simmer.
  • Add the pasta and cook according to package instructions until al dente.
  • Stir in the fresh spinach, tomato paste, and Parmesan cheese until blended.
  • Season with salt and pepper to taste.
  • Serve warm.

Notes

Serve with extra Parmesan cheese on top, garlic bread, and a fresh green salad. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat on the stove or in the microwave.
