  • 1 teaspoon fresh thyme, chopped Adds a lovely earthiness.
  • 1 teaspoon fresh rosemary, chopped Adds a fragrant and comforting flavor.

Preparation

  • In a large pot, brown the chicken over medium heat until golden.
  • Stir in the chopped onion, celery, and carrots, sautéing them until soft.
  • Add the long grain wild rice and stir to combine.
  • Pour in the creamy chicken broth and bring to a gentle boil.
  • Toss in the fresh thyme and rosemary.
  • Reduce the heat and let the soup simmer until the rice is tender, about 45 minutes.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Ladle the soup into bowls and serve hot, garnished with fresh herbs if desired.

Notes

For a creamier soup, add a splash of heavy cream or milk toward the end. Leftovers can be stored in the fridge for up to three days.
