Casserole Ingredients

  • 2 cups cooked long grain rice
  • 2 cups chopped cooked chicken Use leftover chicken if available.
  • 2 cups steamed broccoli florets Ensure broccoli is steamed and tender.
  • 1 onion, caramelized
  • 3 cloves garlic, minced
  • 2 cups cheddar cheese, shredded Can substitute with other cheeses.
  • 1 can cream of chicken soup Can substitute with homemade sauce for a lighter version.
  • 1/2 cup milk Can use low-fat version.
  • 1 cup buttery crackers, crushed
  • to taste salt and pepper
  • 2 tablespoons butter, melted

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix the cooked rice, chicken, steamed broccoli, caramelized onions, minced garlic, cheddar cheese, cream of chicken soup, and milk until well combined.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a greased baking dish.
  • In a separate bowl, mix the crushed crackers with melted butter, then sprinkle over the casserole.

Baking

  • Bake for 25-30 minutes or until the casserole is bubbly and the topping is golden brown.
  • Let it cool for a few minutes before serving.

Notes

Serve warm with a salad or garlic bread. Can be stored in the fridge for 3-4 days; freeze for up to 2 months.
