Ingredients
  

For the Chalupa Shells

  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1.25 cups whole milk
  • 2 tablespoons melted butter

For the Filling

  • 2 cups chopped iceberg lettuce
  • 1 cup chopped tomatoes
  • 1 cup shredded Cheddar cheese
  • 1 cup refried beans Heat until warm.
  • 1.5 cups shredded cooked chicken Mix with taco seasoning.
  • 2 tablespoons taco seasoning Adjust spiciness as per preference.
  • Optional toppings (pico de gallo, sour cream, sliced avocados) Customize based on preference.

Instructions
 

Preparation

  • In a medium mixing bowl, combine the flour, baking powder, and salt. Stir well to mix the dry ingredients.
  • Gradually pour in the milk while stirring until the dough starts to form.
  • Knead the dough until smooth and shape it into 6 equal balls.
  • Roll each ball into a 7-inch circle, dusting with flour as necessary, and keep covered with a damp towel.

Frying

  • Heat about 1/4 inch of oil in a large nonstick skillet over medium heat.
  • Fry one side of a dough circle until lightly browned, about 1 minute.
  • Flip and fry the other side until golden brown. Repeat for all shells.

Assembly

  • Fill each chalupa shell with 2 tablespoons of refried beans.
  • Add 2 to 3 tablespoons of seasoned shredded chicken.
  • Top with chopped lettuce, tomatoes, cheese, and any optional toppings.

Notes

If storing leftovers, keep shells and fillings separate. Fillings last 3 days in the fridge, shells can last at room temperature for a couple of days. Reheat filling before serving. For variations, substitute chicken with ground beef or turkey, and add black beans for extra flavor.
