Ingredients
  

Main Ingredients

  • 8 oz Chow Mein Noodles Cook according to package instructions.
  • 2 pieces Boneless Chicken Breasts Can substitute with thighs for more flavor.
  • 2 cups Shredded Cabbage Adds crunch and color.
  • 1 cup Carrots Sliced thin.
  • 4 pieces Green Onions Chopped for garnish.

Sauce Ingredients

  • 1 tbsp Soy Sauce Use low sodium for less sodium intake.
  • 1 tbsp Fresh Ginger Grated.
  • 3 cloves Garlic Minced.
  • 1 tbsp Cornstarch Helps thicken the sauce.
  • to taste Pepper Dashes to season.
  • 2 tbsp Sesame Oil For cooking and flavor.

Instructions
 

Cooking the Noodles

  • Bring a pot of water to a boil and cook the chow mein noodles according to the package instructions, until just tender. Drain and set aside.

Preparing the Chicken

  • While the noodles are cooking, cut the chicken breasts into bite-sized pieces.
  • Heat 2 tbsp of sesame oil in a large skillet or wok over medium-high heat until shimmering.

Cooking the Chicken and Veggies

  • Add the diced chicken to the skillet and cook for about 5 to 7 minutes, or until golden brown and no longer pink inside.
  • Stir in shredded cabbage, sliced carrots, and chopped green onions. Stir-fry for about 3 to 4 minutes until the veggies begin to soften.

Making and Combining the Sauce

  • In a separate bowl, mix together soy sauce, minced garlic, grated ginger, cornstarch, and a pinch of pepper.
  • Pour the sauce over the chicken and veggies in the skillet. Toss gently to coat everything evenly.

Finishing Touches

  • Add the cooked chow mein noodles to the skillet and combine everything well by stirring for about 2 to 3 minutes to let the noodles soak up the sauce.
  • Serve hot, optionally with more green onions on top.

Notes

To ensure the best flavor, taste the sauce before adding it to the skillet. Adding rice vinegar can enhance the overall taste. For a spicier kick, use red pepper flakes or sriracha.
