Preparation

  • Tenderize the meat by placing the cube steak between two pieces of plastic wrap and using a meat mallet to pound it out to a thin consistency.
  • Set up your breading station by mixing all-purpose flour with salt, black pepper, and garlic powder in one bowl. In another bowl, whisk together the eggs and milk.

Breading

  • Dredge the steak by coating it first in the seasoned flour, shaking off excess, then dipping it in the egg mixture, and finally back into the flour.

Cooking

  • Heat oil in a large skillet over medium-high heat; test readiness by adding a small amount of flour—if it sizzles, it’s ready.
  • Carefully place the breaded steak into the hot oil, cooking for about 3-4 minutes on each side, or until golden brown.

Gravy Preparation

  • Once the steak is cooked, remove it to a plate, leaving oil in the skillet. Add butter to melt, then sprinkle in flour, whisking it into the oil until it forms a paste.
  • Slowly add milk and chicken broth (if using), whisk until the gravy thickens. Season to taste with salt and pepper.

Serving

  • Serve the crispy Chicken-Fried Steak on a plate and ladle warm gravy over the top.

Notes

For best results, let the breaded steak sit for a few minutes before frying to help the coating adhere. Pair with sides like mashed potatoes or green beans for a complete meal.
