Preparation

  • Gather your ingredients by chopping the veggies and shredding the rotisserie chicken.
  • Heat a tablespoon of olive oil in a large pot over medium heat.

Cooking

  • Add the diced onion, celery, and carrots to the pot. Sauté for about 5 minutes, until softened.
  • Pour in the chicken broth and bring to a gentle boil.
  • Add the gnocchi to the pot and cook until they float to the top, about 2-3 minutes.
  • Gently stir in the shredded chicken and fresh spinach.
  • Stir in the heavy cream until well mixed and heated through.
  • Season the soup with salt and pepper to taste.
  • Ladle the soup into bowls and serve hot, optionally topped with grated Parmesan cheese.

Notes

Opt for bone-in, skin-on chicken for deeper flavors. Don't skip sautéing for added layers of flavor. For a lighter version, substitute half the heavy cream with milk. Pairs well with a simple side salad, crusty bread, or garlic bread.
