Ingredients
  

For the soup base

  • 1 tablespoon olive oil Use for sautéing vegetables.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Homemade chicken broth is recommended for deeper flavor.

For the soup ingredients

  • 1 pound gnocchi Cook according to package instructions.
  • 2 cups rotisserie chicken, shredded
  • 1 cup spinach Fresh spinach is preferred.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the diced carrots, celery, onion, and minced garlic; cook until the vegetables are softened.

Cooking

  • Pour in the chicken broth and bring to a boil.
  • Add the gnocchi and cook according to package instructions until they float.
  • Stir in the shredded rotisserie chicken, fresh spinach, Italian seasoning, and season with salt and pepper.
  • Simmer for a few minutes before serving.

Notes

Serve hot, topped with fresh herbs or grated cheese. Pairs well with crusty bread or a side salad. Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, leave out gnocchi and add fresh when reheating. To make a vegetarian version, substitute chicken with mushrooms or additional vegetables and use vegetable broth.
