Main Ingredients

  • 2 cups cooked chicken, shredded Use cooked rotisserie chicken for quick prep.
  • 3 cups egg noodles, cooked It's best to use cooked noodles for this recipe.
  • 1 cup chicken broth
  • 1 cup cream of mushroom soup Can substitute with cream of chicken soup.
  • 1 cup frozen mixed vegetables Feel free to add your favorite vegetables.
  • 1 cup shredded cheddar cheese Reserve half for topping.
  • 1/2 cup onion, diced
  • 1/2 cup milk
  • Salt and pepper to taste Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Breadcrumbs for topping (optional) Broil for a crispy top.

Instructions
 

Preparation & Baking

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, cooked noodles, chicken broth, cream of mushroom soup, mixed vegetables, half of the cheddar cheese, diced onion, milk, garlic powder, onion powder, salt, and pepper.
  • Stir until well mixed and pour the mixture into a greased 9×13 inch baking dish.
  • Top with the remaining cheddar cheese and breadcrumbs if desired.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
  • Let cool for a few minutes before serving.

Notes

Store leftovers in the refrigerator for up to three days or freeze in an airtight container for up to two months.
