  • 1 whole onion, diced The onion adds depth and sweetness to the flavor profile.
  • 2 cloves garlic, minced Garlic elevates everything.
  • 2 tablespoons olive oil For sautéing the veggies.
  • 1 teaspoon thyme A classic herb that complements chicken beautifully.
  • 1 teaspoon rosemary Adds a wonderfully earthy flavor.
  • to taste salt and pepper Essential for seasoning.
  • 1 cup heavy cream This makes the soup luxuriously creamy.
  • 1 tablespoon cornstarch (optional) For thickening if desired.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic. Sauté for about 3-5 minutes until translucent.
  • Add the diced gold potatoes and fresh vegetables. Stir and cook for about 5 minutes.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Once boiling, stir in the shredded rotisserie chicken, thyme, rosemary, salt, and pepper.
  • Reduce heat to low and let it simmer for about 15-20 minutes.
  • If desired, mix the cornstarch with a little water and add it to the pot, stirring constantly.
  • Stir in the heavy cream and let it simmer for another 5 minutes.
  • Taste and adjust seasoning if necessary.
  • Ladle the soup into bowls and enjoy.

Notes

For a lighter version, substitute half-and-half instead of heavy cream. Leftover soup can be stored in an airtight container for up to 3 days.
