Preparation

  • Preheat your skillet over medium heat.
  • Shred the rotisserie chicken.
  • Chop the bacon into small pieces.
  • Cook the chopped bacon in the preheated skillet until crispy.
  • In a bowl, combine the shredded chicken, crispy bacon, ranch dressing, and shredded Colby Jack cheese. Mix well.
  • Place a flour tortilla on a clean surface.
  • Spoon some chicken mixture onto one half of the tortilla.
  • Fold the tortilla over, enclosing the filling.

Cooking

  • Coat the skillet with olive oil or butter, then cook the folded quesadilla until golden brown and melted, about 3-4 minutes per side.
  • Flip the quesadilla gently using a spatula.
  • Once both sides are crispy, remove from skillet and let it sit for a minute before slicing into wedges.
  • Serve with ranch dressing for dipping.

Notes

Customization options include adding veggies like bell peppers or onions and adjusting spices. For a healthier version, use whole wheat tortillas.
