  • 1 cup Celery, diced Fresh celery adds lovely crunch.
  • 1 cup Red grapes, halved Adds a sweet contrast to the savory flavors.
  • to taste Salt and pepper Essential for seasoning.
  • 4 leaves Lettuce leaves Adds crunch and freshness.

Optional additions

  • 1/4 cup Chopped pecans or slivered almonds For added crunch and flavor.

Preparation

  • If using leftover rotisserie chicken, shred it into bite-sized pieces. If starting from scratch, poach your chicken breasts until fully cooked, about 15-20 minutes. Let cool slightly before shredding.
  • In a large bowl, combine the shredded chicken, mayonnaise, diced celery, and halved grapes.
  • Sprinkle with salt and pepper to taste, and mix thoroughly.
  • Carefully slice each croissant in half to create a top and bottom.
  • Spoon a generous portion of the chicken salad mixture onto the bottom half of each croissant.
  • Add a crisp lettuce leaf on top of the chicken salad.
  • Place the top half of the croissant over the filling and gently press down.
  • Serve immediately or, for best flavor, chill in the fridge for a few hours before serving.

Notes

Feel free to customize the chicken salad with your favorite herbs or spices. Store the chicken salad separately from croissants to keep everything fresh and flaky.
