  • 4 pieces chicken breasts Pounded to 1/2 inch thick
  • 1 cup all-purpose flour
  • 2 large eggs Beaten
  • 1 cup breadcrumbs Fresh breadcrumbs preferred
  • to taste Salt and pepper
  • as needed tablespoons Vegetable oil For frying

Instructions
 

Preparation

  • Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick.
  • Season the chicken with salt and pepper.
  • Set up a breading station: one plate with flour, one with beaten eggs, and one with breadcrumbs.

Cooking

  • Dredge each chicken breast in flour, dip in the beaten eggs, and then coat with breadcrumbs.
  • Heat vegetable oil in a frying pan over medium-high heat.
  • Fry the chicken until golden brown and cooked through, about 3-4 minutes per side.
  • Remove from the pan and drain on paper towels. Serve hot.

Notes

Chicken Schnitzel tastes great on its own but can be served with lemon wedges, a side salad, mashed potatoes, or roasted vegetables. Store leftovers in an airtight container for up to 3 days and reheat for best results. You can also try variations with pork or turkey, or add herbs to the breadcrumbs for extra flavor.
