  • 1 cup breadcrumbs Panko can be used for extra crunch.

Preparation

  • Preheat the oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt and pepper.
  • Dredge each chicken breast in flour, shaking off excess.
  • Dip into beaten eggs, then coat with breadcrumbs, pressing firmly to adhere.

Cooking

  • Fry chicken in the hot oil until golden brown and cooked through, about 3-4 minutes per side.
  • Drain on paper towels and serve with lemon wedges.

Notes

To store, let the Chicken Schnitzel cool, wrap it in plastic wrap or store in an airtight container. Refrigerate for 2-3 days or freeze for up to 3 months. Reheat in oven for best texture.
