Preparation

  • Start by pounding the chicken breast fillets using a meat mallet or a heavy pan until they are of even thickness. This ensures they cook evenly and stay juicy. Season both sides generously with salt and black pepper.
  • Prepare three shallow dishes. Place some flour in one dish, beaten eggs in another, and bread crumbs in the third. This is your assembly line for coating the chicken.

Breading

  • Dredge each chicken cutlet in flour, shaking off the excess. Then dip them into the beaten eggs, allowing any surplus to drip off before coating them in bread crumbs.

Cooking

  • In a large skillet, heat enough vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken cutlets. Fry until they are golden brown and cooked through, about 3-4 minutes on each side.

Serving

  • When the schnitzels are done, remove them from the skillet and let them drain on a plate lined with paper towels. Serve them up hot with lemon wedges on the side!
