  • 4 pieces boneless, skinless chicken breasts Flatten to an even thickness.
  • 1 cup all-purpose flour Spoon into the measuring cup to avoid compacting.
  • 2 large eggs Beaten for the breading process.
  • 1 cup breadcrumbs Provides the crispy coating.
  • to taste Salt and pepper For seasoning the chicken.
  • as needed cup Vegetable oil for frying To cover the bottom of the pan.
  • as needed pieces Lemon wedges For serving.
  • as needed Chopped fresh parsley or dill For garnish.

Preparation

  • Flatten the chicken breasts to an even thickness using a meat mallet covered with plastic wrap.
  • Season both sides of the chicken with salt and pepper.
  • Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
  • Dredge each flattened chicken breast in flour, then dip in eggs, and coat with breadcrumbs.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat until hot.
  • Carefully place the breaded chicken in the skillet and fry for 4-5 minutes on each side until golden brown and cooked through.
  • Transfer the cooked schnitzels to a plate lined with paper towels to drain excess oil.
  • Serve hot with lemon wedges and sprinkle fresh chopped parsley or dill on top.

Notes

Make sure the oil is hot before adding the chicken to achieve a perfect crunch, and avoid overcrowding the pan.
