  • as needed vegetable oil for frying Choose a neutral oil with a high smoke point.

Instructions
 

Preparation

  • Place each chicken breast between two sheets of plastic wrap and pound to about 1/2 inch thick. Season both sides with salt and pepper.
  • Set up a breading station with flour, beaten eggs, and breadcrumbs in three shallow dishes.

Breading the Chicken

  • Dredge a chicken breast in flour, shaking off excess, then dip in beaten eggs, and finally coat with breadcrumbs, pressing gently. Repeat with all chicken breasts.

Cooking

  • In a skillet, pour enough vegetable oil to cover the bottom with 1/4 inch depth and heat over medium-high until shimmering.
  • Carefully add the breaded chicken cutlets and fry for about 3-4 minutes on each side until golden brown and cooked through.
  • Transfer cooked schnitzels to a plate lined with paper towels to drain excess oil.

Serving

  • Squeeze fresh lemon over the schnitzel, sprinkle with chopped parsley or dill, and serve with your favorite sides.

Notes

Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F. This dish can be prepared ahead of time and fried just before serving. Roasted vegetables and German potato salad pair nicely as sides.
