  • 4 pieces boneless, skinless chicken breasts Pound to an even thickness for even cooking.
  • to taste Salt and pepper
  • 1 cup all-purpose flour
  • 2 large eggs Beaten.
  • 1 cup breadcrumbs Use Panko or seasoned breadcrumbs for variation.
  • as needed cups Vegetable oil For frying.
  • to serve Lemon wedges

Preparation

  • Preheat the oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper.
  • Dredge each chicken breast in flour, shaking off the excess.
  • Dip the breasts into the eggs, allowing any excess to drip off.
  • Coat with breadcrumbs, pressing to adhere.

Cooking

  • Place the breaded chicken in the hot oil and cook until golden brown and cooked through, about 3-4 minutes per side.
  • Drain on paper towels, and serve hot with lemon wedges.

Notes

For a lighter version, bake the schnitzels instead of frying. Store leftovers in an airtight container in the refrigerator and reheat in the oven for crispiness. Use a meat mallet to pound chicken for even cooking.
