  • 1 cup breadcrumbs Plain or panko breadcrumbs for extra crunch.
  • Salt and pepper to taste Never underestimate the power of seasoning.

Preparation

  • Lay chicken cutlets flat on a cutting board. If thick, pound them to an even thickness for even cooking.
  • Sprinkle salt and pepper generously over both sides of the chicken.
  • Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third.

Breading and Cooking

  • Dredge each cutlet in flour, shake off excess, dip into beaten eggs, and coat generously with breadcrumbs.
  • Heat about ½ inch of vegetable oil in a large skillet over medium-high heat.
  • Fry the breaded cutlets for 3-4 minutes on each side until golden brown and crispy.
  • Transfer to a plate lined with paper towels to drain excess oil.
  • Serve hot with lemon wedges and a sprinkle of fresh parsley or dill.

Notes

For extra flavor, try adding fresh herbs like rosemary to the breadcrumbs. If you have leftovers, store in an airtight container in the fridge. To reheat, use a pan or oven until crispy.
